Rooibos (Aspalathus linearis) is a plant native to southern Africa whose leaves are picked and oxidized to make a naturally caffeine-free beverage that is often consumed like tea. Like any herbal tea not made from the tea plant Camellia sinensis, it is technically a tisane. Rooibos is loved for its sweet flavor profile and low tannin count, meaning it can be steeped for long periods of time without becoming bitter.
