Puer and Dark Tea
Dark teas, such as puer, are fermented in an ultra-oxidation process. The flavor notes canrange from briny to deep wood to smooth and sweet. They can be steeped over and over again all day long without becoming bitter, and yielding different flavor notes with each steep.
The fermentation process of dark teas, including puers, is very different from the fermentation of kombucha and is a completely different experience and product. Unlike kombucha, dark teas should not be fermented at home. Dark teas and puers do not contain alcohol.
